With a maximum of just 13 guests, we are able to travel differently—without rushing from one landmark to the next or following the pace of a large tour group.
There is time to explore beautiful towns and villages, discover local traditions, enjoy the scenery, and truly take in the places we visit.
And because food is such an essential part of Italy, it is also at the heart of this experience.
Throughout the week, you’ll enjoy exceptional whole food, plant-based cuisine, inspired by Italian flavors and prepared with fresh, seasonal ingredients.
Our meals are 100% plant-based and created without added oil, refined sugar, or unnecessary additives, so you can experience the pleasure of eating in Italy without compromising the way you choose to eat.

The Essence of Tuscany’s Beauty
Over eight days, we’ll travel through some of the places that make Tuscany so extraordinary—from Renaissance cities and medieval hill towns to the sweeping landscapes of the Val d’Orcia.
Each destination has been personally chosen for a different reason: its beauty, history, atmosphere, food, or simply because it is a place we love and want to share with you.
There is no rushing through a checklist. We want you to have time to walk, explore, take photographs, discover a small shop, sit in a piazza, and experience each place beyond its landmarks.
Florence
Our journey begins in Florence, birthplace of the Renaissance and one of the most beautiful cities in the world. We’ll walk through its historic center, magnificent piazzas, centuries-old streets, and past landmarks such as the Duomo and Brunelleschi’s extraordinary dome, while Michele brings the city to life through its history, stories, and Italian culture. After exploring Florence, we’ll enjoy our first WFPB & vegan meal together before our private transportation takes us into the Tuscan countryside and toward our Villa.
Val d’Orcia
This is the Tuscany people travel across the world to see. The Val d’Orcia is a UNESCO World Heritage landscape of rolling hills, winding country roads, cypress-lined avenues, vineyards, olive groves, and ancient farmhouses—an extraordinary landscape that has become one of the most iconic images of Italy. We’ll travel through the valley with time to stop, take photographs, and simply take in the views that have inspired painters, travelers, and photographers for centuries. It is Tuscany at its most unforgettable.
Pienza
Set high above the rolling hills of the Val d’Orcia, Pienza is a Renaissance jewel with some of the most breathtaking views in Tuscany. Designed as an ideal Renaissance town, its historic center is filled with beautiful architecture, charming streets, artisan shops, and the traditions of the surrounding countryside. We’ll have time to wander, explore, and enjoy the extraordinary panorama beyond the city walls. Small, elegant, and beautifully preserved, Pienza captures Tuscany at its most timeless.
Siena
With its medieval streets, warm brick façades, and extraordinary architecture, Siena has preserved an atmosphere unlike anywhere else in Tuscany.
We’ll explore the heart of the city, including the magnificent Piazza del Campo and Siena Cathedral, with time to wander its narrow streets, discover local shops, and enjoy the rhythm of the city at your own pace.
Siena is a place to slow down, look around, and simply take in the beauty of being there.
Cortona
Perched high above the Val di Chiana, Cortona is a beautiful Etruscan hill town filled with stone streets, intimate piazzas, artisan shops, and spectacular views across the Tuscan countryside. We’ll wander through its historic center with time to explore, browse, stop for a cappuccino, and discover the quieter corners that give Cortona its charm. It is exactly the kind of place this journey is about: beautiful, deeply Tuscan, and best enjoyed without rushing.
Bagno Vignoni
Few places in Tuscany are as unusual as Bagno Vignoni, a tiny medieval village built around an ancient thermal spring. Instead of a traditional piazza, the center of the village is occupied by a remarkable stone thermal pool, where naturally warm water has flowed for centuries.
Surrounded by the landscapes of the Val d’Orcia, Bagno Vignoni is small, peaceful, and unforgettable—a perfect place to pause and experience a completely different side of Tuscany.
Montepulciano
Rising dramatically above the surrounding vineyards and countryside, Montepulciano is one of Tuscany’s great Renaissance hill towns. We’ll walk its elegant streets and ancient passageways toward the beautiful Piazza Grande, discovering historic palaces, artisan shops, hidden corners, and expansive views over the valleys below. Montepulciano has a wonderful sense of grandeur while still feeling unmistakably Tuscan—a place where history, architecture, food, and countryside come together beautifully.

Walk into town for a cappuccino, browse the local shops, sit in the piazza, visit the market, or simply wander its beautiful stone streets.

Meet Your Hosts
Margarita Restrepo
Margarita is the founder and editor-in-chief of Naked Food Magazine and the visionary behind WFPB.ORG, the Whole Food, Plant-Based Initiative. A certified naturopath, plant-based chef, and author of five cookbooks, Margarita has dedicated her life to advancing the understanding of food as medicine and to guiding people toward true and sovereign health. Her pioneering work in Culinary Medicine blends scientific knowledge with wholistic wisdom, demonstrating how food can heal, regenerate, and transform our lives. She has also developed the Universal Guideline for Human Health, a framework that integrates nutrition, movement, rest, emotional balance, and connection into a cohesive path to well-being.
With certifications in cellular biology, microbiology, virology, and cognitive health, Margarita bridges the gap between science and lifestyle, offering a perspective that is both deeply grounded and empowering. At the heart of her mission is a passion for helping others reconnect with nature, their own biology, and the miracle of food. Margarita’s teachings invite us to thrive—body, mind, and spirit—through the simplicity of whole, plant-based living.
Michele Nasini
Michele (Mik) is the co-director of WFPB.ORG and a professional Fitness Coach, bringing years of experience in training, performance, and human movement to the heart of the WFPB mission.
Born and raised in Italy, Michele offers guests a unique perspective into the traditions of his homeland—sharing insights, stories, and local knowledge that bring depth and authenticity to every experience. From cultural nuances to the history of Italian cuisine, he enriches the journey with context that connects food, place, and people.
With a background as a competitive swimmer and a graduate of Setanta College, Michele combines athletic discipline with a deep commitment to wholistic health, offering a complete pathway to vitality and resilience.
Beyond physical training, Michele’s passion extends into the study of esoterism, symbolism, and human biology, which he weaves into his teachings to explore the deeper connections between body, mind, and spirit.

This tour requires a minimum number of participants and will be officially confirmed no later than December 31, 2026. If the minimum is reached earlier, confirmed guests will be notified immediately so they can proceed with flights and additional travel arrangements.
If the Tour Is Canceled by Us
If the required minimum number of participants is not reached and we cancel the tour, all payments made to us will be refunded in full.
Guest Cancellations
Outside of a cancellation by us as described above, tour payments are non-refundable. The $1,300 reservation payment is non-refundable, and failure to pay the remaining balance by January 31, 2027 may result in forfeiture of your reservation.
For this reason, we strongly recommend comprehensive travel insurance that includes trip cancellation, interruption, medical coverage, and other unforeseen circumstances.

Every guest room at our private Tuscan estate includes its own private en-suite bathroom.
All of the accommodations are arranged as private suites or apartments, offering exceptional space, comfort, and privacy throughout your stay.
For guests traveling together, room assignments are made according to party size, registration order, and accommodation availability.
Specific room assignments will be confirmed prior to the tour.

Solo travelers are warmly welcome.
Guests traveling alone who would like their own private accommodation may reserve a private suite or apartment for an additional $1,000 single-occupancy supplement.
The $1,000 supplement must be paid in full at the time of booking, together with the $1,300 reservation payment.

You have the peace and privacy of a Tuscan countryside estate without being isolated from town.

Our journey begins and ends in Florence, Italy.
The most convenient option is to fly into Florence Airport (FLR) and stay in Florence before the tour begins.
Travelers may also fly into Rome Fiumicino Airport (FCO) and continue to Florence by train via Roma Termini.
Once you are in Florence, we take care of the transportation included in the tour.
On the first day, our private drivers will meet the group in Florence and take us to the Villa.
Throughout the week, all scheduled excursions and transfers are provided in private luxury Mercedes vans with professional NCC-licensed drivers.
On the final day, transportation is provided from the Villa back to Florence. Guests continuing their travels elsewhere may instead make their own onward arrangements.
After booking, we are happy to help with questions about flights, trains, arrival planning, and where to stay in Florence.

The destinations shown on this page form the planned itinerary for the tour, including Florence, Siena, Cortona, Montepulciano, Pienza, Bagno Vignoni, Val d’Orcia, and the surrounding Tuscan countryside.
After signing up, guests will receive the essential arrival and departure information needed to plan their travel, including the exact Florence meetup location and time on the first day, and the exact Florence drop-off location and approximate time on the final day. This allows you to comfortably arrange flights, hotels, trains, and any travel plans before or after the tour.
The complete daily itinerary—including the order of destinations, departure times, restaurants, activities, guided visits, and other scheduled experiences—will be provided to confirmed participants approximately 30 days before departure.
Occasionally, timing, restaurants, or individual activities may be adjusted due to weather, local conditions, availability, or an opportunity that we believe will improve the experience.
Any adjustments will always be made with the intention of providing the best possible journey for our guests.

All meals included in this journey are 100% plant-based and prepared according to our Whole Food, Plant-Based approach, without added oil or refined sugar.
Because food is an important part of the tour and menus, restaurants, and kitchen arrangements are coordinated well in advance, all food allergies, intolerances, medically required diets, or other dietary restrictions must be disclosed to us prior to booking. We may not be able to accommodate certain dietary requirements, and it is essential that this is confirmed before you reserve your place.
We will let you know before you book whether we believe your particular requirements can reasonably be accommodated.
Please understand that meals are prepared in Villa and restaurant kitchens that may also handle common allergens. Therefore, we cannot guarantee an allergen-free environment or the complete absence of cross-contact.
If a guest books a place and only afterward discloses a dietary requirement that we are unable to accommodate and that would prevent participation in the tour, the booking will be considered non-refundable and any payments made will be forfeited, as the reservation holds a committed space and planned arrangements cannot be adjusted at that stage.
Guests with serious allergies, celiac disease, or other medically necessary dietary restrictions should contact us before making a reservation so we can discuss their needs openly and determine whether the tour is appropriate for them.

Our Tuscany tour is designed to be relaxed, but participants should be comfortable with regular walking and the physical conditions typical of historic Italian towns.
Excursions may include cobblestone streets, hills, stairs, uneven surfaces, and periods of walking or standing.
There is no upper age limit. Guests should simply be confident that they can comfortably participate in the planned activities with reasonable independence.
Participants under 18 must travel with and remain under the responsibility of a parent or legal guardian.
Before the tour, every participant must provide:
