What This Immersion Is About

Our WFPB & Vegan Culinary Immersion is far more than a cooking experience. It is an invitation to remember our relationship with nature and to reclaim food as medicine—the most powerful healing tool we have.

This immersion is for anyone who has longed to learn true whole food, plant-based cuisine but lacked the right guidance, structure, or living example.

Here, you will receive detailed, step-by-step instruction to create exceptional WFPB (Whole Food, Plant-Based) dishes in their purest and most nourishing form—
meaning meals made entirely from whole, unprocessed plants: fruits, vegetables, whole grains, legumes, nuts, seeds, and herbs, with no oils, no refined sugars, no additives, and no processed products.

This immersion is also fully vegan, yet distinct from the modern, industry-driven idea of “plant-based” eating that relies on lab-made meats, processed substitutes, and packaged products. Everything you will learn and taste here is real, compassionate, unaltered food—ingredients that come from the earth, not from factories. It is vegan in its ethics, WFPB in its purity, and entirely aligned with the natural biology of the human body.

You will trace ingredients back to their origins: meeting local producers who work in harmony with the land, discovering ancient cultivation practices, and learning the stories, traditions, and healing properties embedded within each food.
By engaging with food at every level—from soil to harvest to the plate—you come to recognize that your biology mirrors the natural world, and that nourishing yourself is an act of remembrance.

Culinary Medicine in action

This immersion brings Culinary Medicine to life.
You will learn how to thrive through vibrant, delicious meals and meaningful, hands-on experiences that reconnect you with the intelligence of nature. Our approach is not simply nutritional—it is wholistic, practical, and deeply aligned with human biology.

And woven throughout this experience is the quiet but powerful foundation of Reversive Medicine—the understanding that the body is not designed to deteriorate, but to repair, regenerate, and reverse dysfunction when given the proper conditions.

Culinary Medicine becomes the daily expression of that truth: using real, whole, unaltered food to restore coherence, clarity, and vitality.

Here, we step away from systems that profit from our disconnection and return to what is real, clean, and sovereign.

By the end of this immersion, you will leave with far more than recipes—you will carry a renewed sense of truth, vitality, and freedom that begins at the table and expands into every area of life.

Daily Culinary Classes + Immersive Excursions

Throughout the immersion, you will learn in two complementary ways:

inside the villa through daily hands-on culinary classes, and out in the region through curated excursions to carefully selected locations. Each day includes a guided WFPB cooking session where you’ll prepare meals step-by-step alongside our chefs, gaining practical mastery of whole-food techniques, flavor building, and Culinary Medicine principles.

Beyond the kitchen, we will take you on meaningful journeys to farms, producers, artisan shops, historic villages, and natural sites that reflect the heritage and wisdom of the Italian countryside. These excursions are not tourist outings—they are learning experiences, where you witness how real food is grown, harvested, crafted, and honored.

Together, the villa classes and excursions create a complete, embodied education—one that blends knowledge, culture, nature, and lived experience into a single, unforgettable journey.

The Culinary Immersion Manifesto

This is not a retreat, a vacation, or a cooking class. This is a return.

A return to the intelligence of nature, the clarity of whole food, and the deep remembrance that your body was designed to thrive. In a world that has normalized disconnection, processed living, and the outsourcing of health, we gather here to reclaim what was never meant to be forgotten.

In this immersion, food is not entertainment or indulgence—it is medicine, memory, lineage, and truth.
You will learn to prepare meals that nourish the body at a cellular level, awaken your senses, and restore the coherence that modern life has eroded. You will touch the soil, meet the hands that cultivate it, and understand the thread that connects seed to harvest, harvest to kitchen, kitchen to human biology.

And woven through every moment of this experience is the essence of Reversive Medicine.

Reversive Medicine reminds us that the body is not fragile or doomed to decline; it is self-repairing, self-regulating, and built to reverse dysfunction when given the correct conditions. It is not a theory—it is the natural law of biology.
Here, we dissolve the illusion that health comes from outside of us.
We return to the truth that regeneration begins with what we choose every day: how we breathe, how we move, how we rest, and what we place on the plate.

Culinary Medicine becomes the practical expression of Reversive Medicine:
real food, in its whole form, used not as a temporary protocol but as a living practice of nourishment, vitality, and sovereignty.

We gather in a 17th-century villa chosen not only for its beauty but for its energetic placement—a setting where the land itself supports clarity, grounding, and inner alignment.
Here, the lake, the stones, the gardens, and the air carry a frequency that invites you to slow down, listen, remember, and realign.

This is Reversive Medicine in practice.
A biological reset that restores coherence, reverses dysfunction, and supports the body’s natural capacity to heal.
It is the living proof that when we remove interference and nourish correctly, the human system recalibrates itself.

Program Highlights:
A Journey Through Food & Culture

Hello Rome!

Our experience begins in the heart of Rome—timeless, vibrant, and welcoming. With its international airport and central location, the Eternal City is the perfect meeting point for our guests arriving from around the world. On the morning of departure, a selection of convenient pick-up points will be available across the city. Guests can simply choose the most suitable location, where our professional driver and host will meet them personally and assist with luggage. From there, we’ll begin our smooth journey north toward the serene landscapes of Umbria, easing into the calm and beauty that await at our private villa on the shores of Lake Trasimeno.

From Rome, a comfortable two-hour drive on our private bus will bring us north to our villa on the shores of Lake Trasimeno. Our transportation is handled by certified professional drivers with full NCC (noleggio con conducente) licenses, which not only guarantees their professionalism and reliability, but also grants them authorization to enter historic city centers and traffic-restricted zones. This means that wherever we go—whether it’s the bustling heart of Rome or the intimate lanes of hilltop towns—you’ll be picked up and dropped off right in the center, with no long walks or complicated transport. It’s a seamless and premium travel experience, designed for both comfort and peace of mind.

Off to a Delicious Journey!

Every day will be woven with culinary discovery, cultural immersion, and restorative time.

Our two expert WFPB chefs will lead you through hands-on experiences, teaching you step by step how to prepare an extraordinary variety of dishes. You’ll learn local staples like fresh bread, pasta, and pizza, while also exploring WFPB (and oil free!) cheeses, plus nourishing soups, decadent desserts, smoothies, natural sweets, and more. Lessons will also include the foundational arts of seed and legume sprouting, food and drink fermentation, wild edibles, and sustainable gastronomy, offering a complete education in Culinary Medicine.

Culinary Excursions

Beyond the kitchen, we’ll explore some of Italy’s most enchanting towns and food traditions. Each excursion is carefully chosen to reflect the intimate bond between Italian culture, food, and the land itself—revealing traditions that continue to nourish body and spirit to this day.

Castiglione del Lago

Set on a promontory overlooking the shimmering waters of Lake Trasimeno, Castiglione del Lago is one of Umbria’s most picturesque towns. Its medieval streets, stone walls, and sweeping lake views create an atmosphere that feels both vibrant and timeless, offering a perfect balance of history and natural beauty. From its fortress to its panoramic terraces, every corner of Castiglione invites you to slow down and take in the magic of the lake.

The Trasimeno area is also renowned for its exceptional legume production, a tradition that has thrived for centuries thanks to the fertile soils and unique microclimate around the lake. Rare varieties of beans, lentils, and chickpeas are cultivated here, many of which are found almost nowhere else. These legumes are prized throughout Italy for their flavor, nutritional richness, and role in local cuisine — a testament to the land’s abundance and the farmers who preserve its heritage.

Cortona

Perched high above the Val di Chiana, Cortona embodies the very essence of Tuscany—ancient, sunlit, and full of quiet charm. Its winding stone streets, medieval walls, and breathtaking views have inspired countless artists and travelers over the centuries. Recognized worldwide as the setting of Under the Tuscan Sun, Cortona’s cinematic beauty is matched only by its warmth and authenticity. Within its historic center, café terraces, artisan shops, and hidden courtyards invite visitors to slow down and savor the spirit of Italian life. An exceptional plant-based dining experience awaits here, celebrating local ingredients and the creative elegance of Tuscan cuisine.

Eremo delle Celle

A short drive from Cortona lies Eremo delle Celle, a secluded Franciscan hermitage founded by Saint Francis of Assisi in the early 13th century. Tucked into the hills among cypress and chestnut trees, it radiates peace and simplicity—a sanctuary untouched by time. The sound of flowing water, stone pathways, and humble chapels create an atmosphere of deep reverence and reflection. Visiting this sacred place offers a rare opportunity to reconnect with stillness, nature, and the timeless essence of devotion that has shaped Italy’s spiritual heart.

Pienza & the Val d’Orcia

During the immersion, we’ll explore Pienza, a Renaissance gem overlooking the rolling hills of the Val d’Orcia, a UNESCO World Heritage site. This valley has been a breadbasket for centuries, its golden fields producing wheat that has long sustained local communities.

We’ll visit a traditional mulino (mill) where grains are still transformed into flour using time-honored methods. You’ll witness the full process — from the raw kernels to the flour that becomes bread, pasta, and other staples of Italian life.

Learning about this tradition connects us directly to the land and its rhythms, reminding us how food has always been both sustenance and culture in this region.

Alongside the mill visit, you’ll enjoy the beauty of Pienza itself, with its sunlit piazzas, winding streets, and panoramic terraces overlooking the Val d’Orcia — a landscape that feels as timeless as the grains it continues to grow.

Any changes will always be designed to make your experience richer and more enjoyable, and you will be promptly notified of every change.

  • Solo travelers are warmly welcome at our events. However, due to the villa’s configuration, it is not always possible to allocate a private room for every individual guest.

Out of the villa’s three double rooms, one room is reserved for a solo traveler who wishes to have a private space. This room includes a queen bed and a private bathroom.

    • To secure this private room exclusively, there is a supplement of $800, to be paid together with the sign up fee.

    • Paying the supplement guarantees that you will have the room entirely to yourself.

    • As availability is limited to one room only, please contact us before booking if you wish to purchase this option.

  • We make every effort to accommodate dietary restrictions and allergies, though it may not always be possible. To ensure the best chance of meeting your needs, it is essential that you inform us of any requirements at the time of registration.

Our chefs, excursions, and partner restaurants are coordinated well in advance, and menus are usually finalized several months before the event. Once this process is complete, adjustments can no longer be guaranteed.

It is the participant’s responsibility to communicate any dietary requirements, restrictions, or allergies during sign-up.

  • We welcome travelers of all ages to our events, and there are no strict age restrictions.

However, for participants under the age of 18, the presence of a parent or legal guardian is required. Minors must be accompanied by an adult at all times during the event.

  • You can reach out to our team at Team@wfpb.org.

If needed, you can email us requesting a video call. You will chat with one of our hosts to answer any question you may have.

We came on your WFPB trip for the food. We only travel when we know we can eat healthy, plant-based food. Your meals surpassed our highest expectations — they were all gourmet meals! You and Chef Gaia attended to every detail — preparing all of your own recipes, appealing to all of our senses, and providing such aesthetically pleasing presentations.
We were so moved by the fact that you also served the food with such loving care and authentic interest in us as individuals. For one week we were part of your family, and you were part of ours. You both tended to our bodies, minds, and souls, creating the conditions for a truly transformational experience for us. We are so grateful for that.
We loved the excursions to all of the Tuscan towns. Each had its own character, charm, and history. The whole was certainly greater than the sum of its parts.
This is one of the most enjoyable trips we have taken in our 47 years together. Your warm and friendly energy, as well as your passion for healthy food and creating transformational experiences, showed in everything you planned. Transformation within the context of loving and healing relationships is the foundation of everything you do. We are the recipients of your purpose and passion.
So, we came for the food, and received so much more!

Laura and I had been dreaming of going to Italy forever but didn’t know how to plan it. Then last year we received an email saying that my favorite magazine was organizing a low-fat, whole-food, vegan retreat in Tuscany. It felt meant to be. We are so glad this opportunity came up — it couldn’t have been a better experience.
Margarita, Michele, and their team were unbelievably great hosts. Being able to spend a week eating freely, without any language barriers, was so relaxing. The food was phenomenal. Add to that a beautiful villa in Tuscany, daily fun activities, and incredible excursions — it truly became the trip of a lifetime.
Sharing it all with a group of like-minded travelers was the perfect complement to this unforgettable experience. We’d highly recommend it to anyone who wants the Italian journey of a lifetime, topped with incredibly delicious and healthy food. Put this trip on your list — you won’t regret it.
Thanks again — our first time in Italy couldn’t have been more special.

This was truly the trip of a lifetime. Margarita and Michele created a magnificent week — they were so kind, thoughtful, and went above and beyond in every way. They even celebrated our birthdays with a beautiful bracelet I’ll treasure forever. I’m deeply grateful that our paths crossed and hope to reconnect again in the future. Many blessings to them both.

You created an atmosphere of love, beauty, and friendship. You shared your knowledge and your love of this beautiful land. Your passion for health translated into dishes that inspired us all to cook a little more and to enjoy our food in good company. We appreciate you both and the staff.

What is WFPB ORG?

WFPB ORG is an international initiative founded by Margarita Restrepo, dedicated to advancing true health, vitality, and sovereignty through a Whole Food, Plant-Based lifestyle.

Our mission is to inspire a return to food in its purest, most natural form—whole, unprocessed, and grown in harmony with nature.

We believe that food is not only nourishment, but also medicine, culture, and connection. By restoring our relationship with what we eat, we restore balance in our bodies, our communities, and the planet.

WFPB ORG exists to:

  • Promote Culinary Medicine – empowering people to heal and thrive through food that is both delicious and deeply restorative.

  • Offer Transformational Experiences – immersive events and retreats that reconnect us with nature, food origins, and authentic living.

  • Raise Global Standards – through certification and education, guiding restaurants, producers, and services toward transparency, integrity, and wholistic practices.

  • Foster Education & Growth – providing resources, courses, and opportunities to learn the art and science of living plant-based in a way that is practical, elevated, and life-changing.

We envision a world where food is no longer a product of industry, but a gift of nature—where individuals reclaim health, joy, and resilience by returning to the simplicity of whole, plant-based living.
