Naked Blueberry Parfait with Rolled Oats and Mint

Yield: 2 jars / 3 small servings

 

Ingredients (organic, non-GMO)

  • 1 ½ cups blueberries (225 g)

  • 1 banana

  • ½ cup rolled oats (50 g)

  • 1 cup plant yogurt or blended frozen banana (240 ml)

  • 3 Tbsp chia seeds (30 g)

  • Fresh mint leaves

 

Method

  1. Blend blueberries and banana until creamy.

  2. Layer oats, yogurt, and berry cream in jars.

  3. Garnish with mint and extra berries.

 

Chef’s Note:

To enjoy cold, freeze berries for 30 minutes before using.
