Creamy Cauliflower & Thyme Soup

Yield: 4 Servings
Ingredients (all organic, non-GMO)
1 yellow onion, chopped
2-3 cloves garlic, minced
1 cauliflower head, cut into small florets (about 6-8 cups), see chef’s note
6 cups vegetable broth
3 sprigs fresh thyme, plus more for serving
1 bay leaf
Red pepper, whole or freshly grounded
½ cup coconut milk, plus more for garnish
Method
In a large pot over medium heat, place onion and garlic and sauté with a couple of teaspoons of water until soft, about 3 minutes. Add cauliflower, broth, thyme, and bay leaf. Bring up to a simmer and cook until cauliflower is very tender, 15 to 20 minutes.
Remove thyme springs and bay leaf and place in compost pile. Transfer vegetables to a blender (in batches if needed) and blend until smooth. Stir in ½ cup of coconut milk and reheat if needed.
Garnish with a drizzle of coconut milk, red pepper, and fresh thyme. Serve immediately.
Chef’s Note:
Save a few slices of cauliflower for topping if desired. Allow the slices to brown in a pan by searing with a bit of shoyu, tamari, a bit of red wine or water.
