This is a fabulous and easy bowl to put together. Earthy eggplant meets crisp apple and fluffy quinoa — a harmony of flavors and textures that supports digestion, energy, and gentle detoxification. Add some raw leafy greens to make it a perfect meal either as a side salad, or simply by serving it in a bed of fresh greens like arugula, spinach, kale or your favorite greens mix.


Eggplant, Apple & Quinoa Harvest Bowl

Yield: 2 bowls

Ingredients (organic, non-GMO)

  • 1 cup quinoa (185 g cooked)

  • 1 eggplant, cubed

  • 1 apple, sliced

  • 2 cups mixed greens (60 g)

  • 1 Tbsp lemon juice (15 ml)

  • Herbs: parsley, thyme

  • Sea salt & pepper to taste

Method

  1. Roast eggplant at 400°F (200°C) until caramelized.

  2. Cook quinoa; fluff with fork.

  3. Layer quinoa, greens, roasted eggplant, and apple.

  4. Finish with herbs, lemon, and pepper.

Chef Notes

  • Add walnuts for omega-3s.

  • Drizzle tahini-lemon for extra creaminess.
