What This Wholiday Is About

Our WFPB & Vegan Italian Wholiday is an invitation to experience Italy the way it was meant to be lived: slowly, intentionally, and with a heart wide open. Instead of rushing from one landmark to another, we move at the rhythm of nature — savoring the lake at sunrise, wandering medieval villages, enjoying quiet afternoons, and sharing long, nourishing meals prepared with love.

This is Italy not as a checklist, but as a feeling.

Experience Italy in a Unique, Wholistic Way

This wholiday is centered on food, nature, presence, and joy. You’ll enjoy exceptional whole-food, plant-based & vegan meals crafted in our signature WFPB style — all seasonal, oil-free, sugar-free, additive-free, and inspired by true Italian tradition. Every dish is designed to be satisfying, nourishing, and infused with the flavors and purity that Italy is known for.

But this experience goes far beyond the plate.
It is about feeling Italy through the senses:
the breeze from Lake Trasimeno, the golden light on the hills, the quiet beauty of ancient stone villages, the rhythm of mornings that invite you to breathe deeper and simply be.

Each day follows an effortless flow:
enjoy → explore → rest → repeat.
There is no rush, no pressure, no rigid timetable—only the gentle unfolding of a beautiful day in a beautiful land.

The Most Authentic Italy — Curated for You

You will visit places that reflect the true spirit of Umbria & Tuscany:
hidden viewpoints, artisan shops, lakeside villages, historical corners, and local gems filled with story, character, and warmth.
These are locations most travelers never discover, guided by hosts who genuinely know and love this land.

This is not tourism — this is connection.

Designed So You Can Truly Relax

From the moment you arrive, everything is arranged for youdelicious meals, thoughtful transportation for all scheduled outings,
and a gentle, purposeful flow to each day.
There is nothing to plan, nothing to organize, nothing to think about. You can simply sink into the experience.

Our small-group format keeps the atmosphere intimate, personal, and easy. There is plenty of time to rest at the villa, swim in the saltwater pool, read in the gardens, take photos, or explore at your own pace.

The villa’s natural beauty and energetic stillness deepen the sense of calm and presence, allowing you to truly exhale and just be.

A Wholiday to Remember

This isn’t a sightseeing tour — it’s a way of living Italy.

A peaceful, nourishing escape designed to leave you:

  • restored

  • inspired

  • grounded

  • and filled with the simple joy of good food, good company, and the gentle magic of the Umbrian–Tuscan countryside.

This Wholiday is Italy as it should be:
beautiful, delicious, slow, heartfelt, and profoundly human.

The Italian Wholiday Manifesto

This Wholiday is not a vacation.
It is a return to simplicity, to presence, and to the quiet joy that comes from living slowly and fully.

Italy is more than sights and monuments — it is a rhythm.
A warm, generous, unhurried way of being.
Morning light on the lake, herbs in the garden, medieval streets, and long, nourishing meals shared in good company.

Here, we choose a different Italy:
the Italy of quiet lakes, golden sunsets, intimate villages, and days that unfold without pressure.

We nourish the body with whole, real, compassionate food.
We nourish the heart with beauty and connection.
We nourish the mind with stillness and space.
We nourish the spirit by remembering that joy is medicine.

This is Italy lived slowly and felt deeply — through all four bodies: physical, emotional, mental, and energetic.
Nothing forced. Nothing rushed. Just the gentle unfolding of a beautiful day.

And in that simplicity, something shifts:
the nervous system softens, the mind clears, the body unwinds, and you remember what it feels like to simply enjoy being alive.

By the end, you will not want to leave —
not because of what you saw,
but because of how you felt.

This is the Italy you were always meant to experience.
A Wholiday for your senses.
A Wholiday for your wholeness.

Program Highlights:
A Journey in the Heart of Italy

Meetup in Rome

Our holiday begins in Rome, a welcoming and well‑connected starting point for guests joining us from around the world. On departure morning, we’ll offer several convenient pick‑up locations throughout the city. A dedicated host and driver will be present at each point to greet you, assist with luggage, and ensure a smooth and relaxed start to your journey.

Leaving Rome behind, our group will hop on our private bus to travel north toward Lake Trasimeno, surrounded by olive groves, vineyards, and open skies. Every detail of the journey has been thoughtfully arranged for comfort and ease. Our transportation is handled by certified professional drivers with full NCC licenses, which not only guarantees their professionalism and reliability, but also grants them authorization to enter historic city centers and traffic-restricted zones. Whether entering the heart of a hilltop village or returning to the quiet of our private villa, transportation remains seamless, comfortable, and refined — a journey designed for peace of mind and relaxation from start to finish.

The Excursions

You’ll enjoy exclusive excursions, personally curated by your hosts to bring you into Tuscany’s most beautiful towns, landscapes, and experiences. Each journey has been carefully chosen to reflect the deep connection between Italian culture, tradition, and the land itself — offering opportunities to explore historic centers, relax in natural hot springs, and savor unforgettable vegan meals in handpicked restaurants that redefine Italian dining.

Siena

Siena is a city where history is not just remembered — it’s lived. Known for its shell-shaped Piazza del Campo, Siena carries a strong sense of identity and tradition that is felt in every street and neighborhood. Home to Monte dei Paschi di Siena, the oldest surviving bank in the world (est. 1472), the city reflects a long legacy of culture, community, and craftsmanship. Walking through Siena’s narrow stone lanes and beneath its terracotta rooftops, you feel transported, yet completely connected to the rhythm of everyday Italian life.

Cortona

Cortona is a hilltop gem that embodies the true spirit of la dolce vita. Known to many as the backdrop of Under the Tuscan Sun, it remains deeply authentic, with winding cobblestone streets, panoramic valley views, and a gentle, timeless rhythm of daily life. As you wander through Cortona, you’ll feel its layers of history, culture, and everyday charm — from family-run cafés and artisan shops to quiet piazzas where locals gather just as they have for generations. It is both beautiful and grounded, offering a warm, real connection to Tuscany’s heritage and lifestyle.

Eremo delle Celle

We’ll visit Eremo delle Celle, an ancient hermitage once home to Saint Francis of Assisi. Tucked into a quiet wooded valley just outside town, this historic site offers a rare glimpse into centuries-old monastic life in the Umbria–Tuscany countryside. With its stone pathways, small chapels, and flowing stream, the hermitage carries a peaceful simplicity that encourages you to slow down and take in the moment. It’s a place where nature, history, and silence naturally come together — an opportunity to pause, breathe, and feel connected to the landscape in a quiet, meaningful way.

Rapolano Terme Hot Springs

Rapolano Terme is one of Tuscany’s most historic thermal spa areas, known since Roman times for its mineral-rich natural springs. Surrounded by rolling hills and soft travertine stone, Rapolano offers a peaceful atmosphere where warm waters, nature, and quiet Italian hospitality come together. You’ll spend the day at a premium wellness spa, enjoying natural thermal pools, calm relaxation spaces, and beautiful outdoor terraces designed for real rest and rejuvenation. This is a gentle pause in the week — time to unwind, soak in the healing waters, and simply enjoy being cared for in a serene Tuscan setting.

The warm, mineral-rich thermal waters naturally support circulation, relax muscles and joints, and help release stored tension — a gentle way to care for the body while enjoying the Italian countryside. Between soaks, you can take in the peaceful atmosphere, sweeping hill views, and thoughtful wellness amenities that make Rapolano feel both restorative and quietly luxurious.

Assisi

Assisi is a place where time feels slower and life takes on a gentler rhythm. Set on the quiet slopes of Mount Subasio, this medieval town is known for its soft pink stone, peaceful streets, and sweeping views across the Umbrian countryside. It’s a place that invites you to walk, look, and breathe a little more deeply. As the birthplace of Saint Francis, Assisi carries a subtle sense of reverence — not loud or imposing, but warm and grounded. You’ll find ancient basilicas, quiet cloisters, artisan workshops, and small piazzas filled with everyday life, each corner reflecting centuries of devotion to simplicity, nature, and community.

Pienza

Together we'll visit Pienza, a small Renaissance town overlooking the soft rolling hills of the Val d’Orcia — one of the most iconic and photographed landscapes in Tuscany. With its harmonious architecture, sun-lit piazzas, and quiet stone lanes, Pienza captures the feeling of peaceful beauty and timeless simplicity that defines this region.

Val d’Orcia

From Pienza’s panoramic terraces, you’ll take in sweeping views of the Val d’Orcia, a UNESCO World Heritage landscape of cypress-lined roads, olive groves, and golden rolling fields. The open horizons, gentle breeze, and naturally unhurried pace offer a sense of calm and spaciousness — an ideal moment to slow down, breathe, and simply take in the beauty around you.

On our final morning, after a slow breakfast and one last look over the lake and hills, we’ll prepare for our return to Rome. Our drivers will arrive at the villa and we’ll head back together, carrying the ease, flavors, and beauty of the week with us.

From there, you may continue your travels through Italy or make your way home — either way, you’ll leave with new memories, new connections, and a sense of calm and fullness that only this corner of Italy can give.

Just beyond the villa lies Isola Maggiore, a place long associated with:

  • ancient pilgrimage routes

Many visitors describe feeling:

This is one of the reasons we chose this location with so much intention.

Out of the villa’s three double rooms, one room is reserved for a solo traveler who wishes to have a private space. This room includes a queen bed and a private bathroom.

    • To secure this private room exclusively, there is a supplement of $800, to be paid together with the sign up fee.

    • Paying the supplement guarantees that you will have the room entirely to yourself.

    • As availability is limited to one room only, please contact us before booking if you wish to purchase this option.

  • We make every effort to accommodate dietary restrictions and allergies, though it may not always be possible. To ensure the best chance of meeting your needs, it is essential that you inform us of any requirements at the time of registration.

Our chefs, excursions, and partner restaurants are coordinated well in advance, and menus are usually finalized several months before the event. Once this process is complete, adjustments can no longer be guaranteed.

It is the participant’s responsibility to communicate any dietary requirements, restrictions, or allergies during sign-up.

  • We welcome travelers of all ages to our events, and there are no strict age restrictions.

However, for participants under the age of 18, the presence of a parent or legal guardian is required. Minors must be accompanied by an adult at all times during the event.

  • You can reach out to our team at Team@wfpb.org.

If needed, you can email us requesting a video call. You will chat with one of our hosts to answer any question you may have.

We came on your WFPB trip for the food. We only travel when we know we can eat healthy, plant-based food. Your meals surpassed our highest expectations — they were all gourmet meals! You and Chef Gaia attended to every detail — preparing all of your own recipes, appealing to all of our senses, and providing such aesthetically pleasing presentations.
We were so moved by the fact that you also served the food with such loving care and authentic interest in us as individuals. For one week we were part of your family, and you were part of ours. You both tended to our bodies, minds, and souls, creating the conditions for a truly transformational experience for us. We are so grateful for that.
We loved the excursions to all of the Tuscan towns. Each had its own character, charm, and history. The whole was certainly greater than the sum of its parts.
This is one of the most enjoyable trips we have taken in our 47 years together. Your warm and friendly energy, as well as your passion for healthy food and creating transformational experiences, showed in everything you planned. Transformation within the context of loving and healing relationships is the foundation of everything you do. We are the recipients of your purpose and passion.
So, we came for the food, and received so much more!

Laura and I had been dreaming of going to Italy forever but didn’t know how to plan it. Then last year we received an email saying that my favorite magazine was organizing a low-fat, whole-food, vegan retreat in Tuscany. It felt meant to be. We are so glad this opportunity came up — it couldn’t have been a better experience.
Margarita, Michele, and their team were unbelievably great hosts. Being able to spend a week eating freely, without any language barriers, was so relaxing. The food was phenomenal. Add to that a beautiful villa in Tuscany, daily fun activities, and incredible excursions — it truly became the trip of a lifetime.
Sharing it all with a group of like-minded travelers was the perfect complement to this unforgettable experience. We’d highly recommend it to anyone who wants the Italian journey of a lifetime, topped with incredibly delicious and healthy food. Put this trip on your list — you won’t regret it.
Thanks again — our first time in Italy couldn’t have been more special.

This was truly the trip of a lifetime. Margarita and Michele created a magnificent week — they were so kind, thoughtful, and went above and beyond in every way. They even celebrated our birthdays with a beautiful bracelet I’ll treasure forever. I’m deeply grateful that our paths crossed and hope to reconnect again in the future. Many blessings to them both.

You created an atmosphere of love, beauty, and friendship. You shared your knowledge and your love of this beautiful land. Your passion for health translated into dishes that inspired us all to cook a little more and to enjoy our food in good company. We appreciate you both and the staff.

What is WFPB ORG?

WFPB ORG is an international initiative founded by Margarita Restrepo, dedicated to advancing true health, vitality, and sovereignty through a Whole Food, Plant-Based lifestyle.

Our mission is to inspire a return to food in its purest, most natural form—whole, unprocessed, and grown in harmony with nature.

We believe that food is not only nourishment, but also medicine, culture, and connection. By restoring our relationship with what we eat, we restore balance in our bodies, our communities, and the planet.

WFPB ORG exists to:

  • Promote Culinary Medicine – empowering people to heal and thrive through food that is both delicious and deeply restorative.

  • Offer Transformational Experiences – immersive events and retreats that reconnect us with nature, food origins, and authentic living.

  • Raise Global Standards – through certification and education, guiding restaurants, producers, and services toward transparency, integrity, and wholistic practices.

  • Foster Education & Growth – providing resources, courses, and opportunities to learn the art and science of living plant-based in a way that is practical, elevated, and life-changing.

We envision a world where food is no longer a product of industry, but a gift of nature—where individuals reclaim health, joy, and resilience by returning to the simplicity of whole, plant-based living.
